Cactus Taproom features craft beer, wine and cider that has been thoughtfully selected, meticulously rotated, and properly stored to maintain the freshest selection of craft in Peoria, AZ.


IPA - (or India Pale Ale) has evolved into the most aggressively hopped beer style of them all. If you like bitter, floral, earthy, citrusy, piney and fruity notes, you’ll like an IPA. The three main styles of IPA are American-style IPA, English-style IPA and Double or Imperial IPA.


PALE - An ale made with predominantly pale malt. Fruity, crisp and copper in color, pale ales are your session beers offering a broad range of flavors, bitterness and strength. There are 6 main types of pales: American Pale Ale, India Pale Ale (IPA), English Bitter / Ordinary Bitter, Strong Pale Ales (American-Style), American Amber Ale / Red Ale and Bière de Garde.


LAGER - The name lager is taken from the German word lagern, meaning “to store.” There is such a wide range of styles available within the lager category ranging from light to spicy, fruity and smoky. Some notable styles include: Helles Bock, Pilsner, Vienna Lager, American Dark Lagers, Bock Beer, Doppelbock and Märzenbier/Oktoberfest Beers.

AMBER/RED - American style of beer (ale or lager) that’s made with specialty malts. The emphasis is on the malt which lends to flavor notes of toast, caramel, buttery toffee, and some malty sweetness. This style generally has a nice dry finish and can be offset with hops.

STOUT AND PORTER - Fans of darker, silky and complex Porters and Stouts can come to our taproom and expect something on tap.

SOUR - For those that like layers of flavor we will be offering this specialized beer in rotating styles of: American wild ale, Gose, Lambic, Flanders and Berliner Weisse.

SEASONAL - Cactus Taproom will offer beers that are in season or brewed for a holiday or festival period.

CIDER - We will offer a variety of hard ciders available on tap and by bottle.

Featuring a variety of seasonal, global and traditional wines by the glass.

Top Shelf did not disappoint. Fresh hot chips and spicy salsa. I ordered the Fajita Burrito Fundido and split it with my mom. It was absolutely divine. Give this place a try. You won’t regret it.

4worldlovers: Experience our handcrafted flavors: marinated and grilled tacos, authentic Spanish style tapas, zesty spices, all through a convenient drive through and casual walk-up / walk-in venues, redefining and elevating the fast food experience!

Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit down restaurant. Our model, requested by the owner, called for a drive thru format where a totally fresh menu would be provided for a fast food restaurant and Phoenicians on the go.

The difficulty with serving fresh food in a fast food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds has to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good.

​​Brushfire’s exciting menu was developed by Chef John Simmons, an award-winning chef and restaurateur from Las Vegas. The unique drive-up concept in tapas and grilled tacos cuisine was executed by Chef Gregg Piazzi, of Phoenix, a culinary partner and Director of Culinary Operations. Chef Simmons and Chef Gregg, along with Clint Berkey and family, are excited to bring an elevated dining experience to Peoria, Arizona and beyond.

Giving to great causes around the world through missionary work has led him to create a new source to assist in this effort.
